Cherry Cookies
These cookies need no baking yet they make one decadent dessert. The dough made of dates, walnuts, and shredded coconut is gooey and delicious, easily molding itself into any kind of cookie shape you like. You have a full creative license here with the toppings using any kind of fresh of frozen fruit and berries as a centerpiece. Topping it with a drizzle of honey puts a cherry on top of this dishโฆ.literally!
Ingredients:
1-2 cups of dates
1/2 - 1 cup of walnuts
1/2 cup of unsweetened shredded coconut
Fresh or frozen cherries (other berries mixtures will do, like raspberries)
Raw honey
Chocolate Hazelnut butter by Jem (optional)
Wild Blueberry Powder by Vimergy (optional)
Directions:
Combine and pulse dates, walnuts and shredded coconut in a blender until a dough-like consistency
Line a tray with parchment paper
Place a cookie form on top of a parchment paper and press a dough mixture into the form evening out the thickness
Remove the cookie form (if the dough sticks too much, add a bit more walnuts and shredded coconut)
Continue making cookies until you run out of "dough"
Decorate with cherries or raspberries and drizzle with raw honey and/or Jem chocolate hazelnut butter
For Energy Bites: you can use part of the "dough" to pulse with wild blueberry powder, make small balls and roll them in wild blueberry powder and/or shredded coconut.
