Russian Potato Salad
When I was little, my Mom would often make Salad “Oliviye” - a traditional Russian potato salad that is always a must during New Year’s festivities in Russia. In fact, it is one of the most popular and well-known Russian salads. While there are several versions available online, I have created my own vegan version. Whenever I bring it to potlucks I always get compliments from both carnivores and herbivores alike!
The traditional recipe has ham and mayonnaise, which I replace with red kidney beans and soy-free Vegennaise. You can use a meat substitute of your choice if you do not like beans but want to keep this salad plant-based. I often make it for Thanksgiving, Christmas, and New Year’s. The key is to boil a couple of veggies ahead of time (I use a pressure cooker to save time) and you’ll be able to make this salad in no time, even if guests are on their way. And, most importantly, you want to get the right kind of pickles, it will make a big difference in overall flavor. I offer brand suggestions below.
Ingredients:
2 boiled potatoes, cooled
3-4 boiled carrots, cooled.
1 purple onion
1 can red kidney beans
1 can green peas
1 jar soy-free Vegennaise
A few sprigs of parsley or chopped scallions
Directions:
Boil potatoes and carrots and let cool.
Chop all the ingredients and combine together in a bowl.
Top with Vegenaise and toss until the entire salad is well-coated. Decorate with parsley sprigs or chopped scallions. Now…how simple is that? Enjoy!
