Russian Potato Salad

When I was little, my Mom would often make Salad “Oliviye” - a traditional Russian potato salad that is always a must during New Year’s festivities in Russia. In fact, it is one of the most popular and well-known Russian salads. While there are several versions available online, I have created my own vegan version. Whenever I bring it to potlucks I always get compliments from both carnivores and herbivores alike!
